I admit, I snack more than I should on snacks that aren’t terribly healthy. I share with you some easy, healthy, and tasty snack ideas that are great to eat during that awkward time after lunch and before dinner!

1. No-Bake Peanut Butter Bites (Makes 15-20) (Vegetarian)
1 cup gluten free oats
1/2 cup peanut butter
1/4 cup honey
1/2 cup shredded coconut
1 tbsp cocoa powder
1 tsp vanilla
Mix all ingredients together. Refrigerate for 5 minutes to harden up mixtures. Shape into balls. Enjoy!
2. Apple Cookies (Vegan)
Granola, chocolate chips, dried fruit, etc.
Core apples. Slice apples as thick or as thin as you like. Cover apples with peanut butter. Sprinkle toppings (granola, dried fruit, chocolate, etc.) on top of apples. Enjoy!
3. Baked Apple Chips (Vegan)
Preheat oven to 200 degrees F.
Slice apples very thin with either a mandolin or a knife.
Sprinkle with cinnamon-sugar or just plain cinnamon.
Bake in the oven for 3 hours.
Halfway through baking, take apple chips out and flip them over. Stick back in the oven for remaining 1.5 hours.
Turn oven off and leave apple chips in the oven for an additional hour as the oven cools down.
Take apple chips out of the oven and enjoy!
