Recipes & Ingredients:

Sweet Potato Hummus:
– 2 medium sweet potatoes
– 1 can or 1 and a half cups of cooked chickpeas
– 5 tablespoons of tahini
– 3 tablespoons of water
– juice of 2 lemons
– 3-5 garlic cloves (depending on how much garlic you like!)
– 1-2 teaspoons of onion powder (optional)
– salt & pepper (optional)
* Make as demonstrated. * Makes a large batch!

Sweet Potato & Bean Burgers:
– 2 medium sweet potatoes
– 1 can or 1 and a half cups of cooked white beans
– fresh rocket
– 3 shallots or 2 onions
– garlic power
– 1 cup of gram (chickpea) flour – or a flour of your choice + extra for shaping burgers
– 1 wholegrain or gluten free burger bun
– slice of “violife” vegan cheese
– avocado & tomato
– ketchup, veganaise or tahini to spread on buns (optional)
– lambs lettuce
Method: fry first to seal both sides in a little coconut oil or water, then straight into a hot oven for 10-15 minutes

Crunchy Sweet Potato Salad:
– Sweet potato fries (as shown) – * If you sprinkle water underneath the baking paper it makes the best “no oil no stick chips”!
– lambs lettuce (or any greens and fresh herbs of your choice)
– sweetcorn (canned is fine!)
– half an avocado
– raw pecan nuts
– drizzle of maple syrup
– squeeze of fresh lemon or lime juice

Spicy Sweet Potato Lettuce Wraps:
– 1-2 heads of romaine lettuce (used as lettuce boats/wraps)
– baked sweet potato chips as shown
– thinly sliced red onion
– drizzle of tahini (and or lemon juice)
– generous sprinkle of cinnamon
– sriracha (optional if you like it hot!)
